Add the powdered sugar and mix on the lowest speed until the sugar is incorporated.Beat together until smooth, about 1 minute. Add the cream cheese and butter to a bowl of a stand mixer fitted with the paddle attachment.Cool completely on a wire rack before frosting with cream cheese frosting.Scoop the batter into the 20 prepared cupcake tins.Fold in the shredded coconut and crushed pineapple.
